Bush’s Fried Chicken opens doors

A new place to eat opened its doors early this morning to Pecos and the owners are excited about their new venture. “I hope Pecos is as excited to have us, as we are to be here,” said Keith Bush, one of the owners of Bush's Chicken. Keith and his brother, Tommy Bush, are currently the owners of  49 restaurants located in Texas. “This is our 49th restaurant. We have 10 in San Antonio, six in Midland/Odessa area, four in Austin and the rest are located in Waco, Kileen, Temple and Belton,” said Bush.

Bush said bringing their restaurant to Pecos was something that they had been working on for the past two years. “It was a toss-up between Lamesa and Pecos, and we chose Pecos,” said Bush, who added that Lamesa is on the list for a new Bush’s Chicken as well.

“We’re open in Pecos thanks to the Pecos Economic Development Corporation and Bill Oglesby,” said Bush. “He was very helpful in getting us here,” he said.

Bush said that they have hired 25 individuals to work at the local eatery, and plan to hire 25 more. “Since we don't have anywhere to train the new employees, we brought in our crew from Waco, who will be working with the local employees,” said Bush. “We are training the cooks, and will be training the counter help,” he said.

The local restaurant will be open from 10 a.m. until 10 p.m., seven days a week, 362 days a year. “We close for Christmas, Thanksgiving and Easter is optional,” said Bush. “But we also close early on holidays to give the employees a break,” he said. The local manager, Steve Hardin, will be working with the new employees to get them ready to provide the excellent service Bush's Chicken is known for, according to Bush.

Bush’s Chicken is a community friendly, family oriented quick-service restaurant with a pleasant dine-in experience, the industry’s fastest drive-through, and complete catering services, according to Keith Bush. Keith Bush stepped off the football field in Odessa, Texas and started cooking fried chicken in a well known fast food chain. In 1996 Keith started his own company, Bush's Chicken, in Waco, Texas.

Hammock Partners, L.L.C., purchased Bush's Chicken in 2005 and moved the headquarters to Austin, Texas. Jeff Hammock serves as President, and Jim Hammock as Chairman of Hammock Partners. The Hammock’s have backgrounds in the High Tech Computer industry, while Jeff Hammock has QSR owner/operations experience with a chicken concept in the Midwest.

Keith Bush remains very active in the day to day operations of the company as a Master Franchisor. “Bush’s Chicken is committed to the perfection of providing a family friendly quick-service restaurant experience for southern fried chicken lovers,” said Bush.

“Our many innovations include perfecting the art of tasty fried chicken, great side dishes, and sweet tea,” he said. The company culture is based on the generous support of local community activities, and particularly, schools. “We are most proud of the number and quality of young people that have had great employment experiences in the Bush's system,” said Bush.

We offer a variety of menu items for Southern Fried Chicken lovers including boned chicken, tenders, sides, desserts, and great sweet tea. “Our sacred mission is to serve the best friend chicken in our markets. The eatery has happy hour where the drinks are only 49 cents, between the hours of 2-5 p.m. Bush' sides include fried okra, french fries, mashed potatoes, country-style cream gravy, green beans, creamy cole slaw, corn on the cob, jalapeno poppers, freshly baked yeast rolls, and macaroni and cheese.
